Jackie Newgent, a chef, registered dietitian, and author of <a href=\"http:\/\/www.amazon.com\/gp\/product\/0470404493?ie=UTF8&amp;tag=mominthecity-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=0470404493\">Big Green Cookbook: Hundreds of Planet-Pleasing Recipes and Tips for a Luscious, Low-Carbon Lifestyle<\/a> hosted the call and gave the following tips:<\/p>\n<p><strong>1. Select smart skillets.<\/strong> Rather than using non-stick pans with chemicals, use PFOA-free and recycled aluminum pans, like Scanpan.<\/p>\n<p><strong>2. Practice eco-cooking techniques.<\/strong>  Rather than boiling, try lid-cooking (cooking in a covered pan while the burner is off).  *Note when lid-cooking: No peeking!<\/p>\n<p><strong>3. Think at your sink.<\/strong> Rather than constantly rinsing, scrub food items in a bowl and toss it with ice.  Other ways to save water is to use salad spinner and pasta salad (which does not require rinsing).<\/p>\n<p><strong>4. Take advantage of residual value.<\/strong> Rather than baking, try hyper-baking for dishes that are not temperature sensitive (i.e. cookies).  Hyper-baking is baking without preheating and using available heat after turning the oven off.<\/p>\n<p><strong>5. Love your small appliances. <\/strong>Microwaves, toaster ovens and panini grils reduce energy by half to two-thirds.  Just be careful to avoid \u201cvampire\u201d energy drain (leaving the plugs in when they are not in use).<\/p>\n<p><strong>6. Beware of your big appliances.<\/strong>  For a \u201cfriendlier\u201d refrigerator, keep the fridge portion at 34 \u2013 40 degrees Fahrenheit.  For the freezer, keep it at 0 degree Fahrenheit.  Glass bowls in the fridge and artisanal ice cubes in the freezer also help\u2026as does buying Energy Star appliances.<\/p>\n<p><strong>7. Serve earth-style meals. <\/strong> Instead of lots of dishes, prep, cook and serve all-in-one dishes.  <\/p>\n<p><strong>8. Be waste friendly.<\/strong> Produce as little waste as possible.  Ideas include using produce skins, seeds., etc; going organic and composting.<\/p>\n<p><strong>9. Green size-it!<\/strong>  Rather than meat entrees with veggie side dishes, switch to veggie entrees and meat side dishes.  Butterfly or pound meat\/poultry to maximize the portions.  \u201cThink meatballs, not meatloaves.\u201d<\/p>\n<p><strong>10. Enjoy ecotarian cuisine.<\/strong>  Consider a fresh, seasonal, simple plant-based diet approach.  A few sites that will help include the following: <a href=\"http:\/\/www.eatwild.com\/products\">www.eatwild.com\/products<\/a>; <a href=\"http:\/\/www.heritagefoodsusa.com\">www.heritagefoodsusa.com<\/a>; <a href=\"http:\/\/www.localharvest.org\">www.localharvest.org<\/a>; <a href=\"http:\/\/www.edf.org\">www.edf.org<\/a>; and <a href=\"http:\/\/www.montereybayaquarium.org\">www.montereybayaquarium.org<\/a>.<\/p>\n<p>The tips that stood out to me the most were those regarding different boiling and baking techniques.  I\u2019m going to try that.  I don\u2019t really use my stove a lot, but I will try them out.
