Ground Beef and Andouille Sausage Chili
<\/strong>
Ingredients<\/strong><\/em><\/p>\n\n\n\n

1 lb lean ground beef<\/li>

12 oz Cajun style andouille sausage<\/a> (casing removed)<\/li>
1 cup onion, chopped<\/li>
4 cloves garlic, finely chopped<\/li>
1 cup green pepper, seeded and chopped<\/li>
1 cup red pepper, seeded and chopped<\/li>
1 can (16 oz) kidney beans, drained<\/li>
1 can (14.5 oz) diced tomatoes, undrained<\/li>
1 can (8 oz) tomato sauce<\/li>
2 tbsp\u00a0 chili powder<\/a><\/li>
Seasonings to taste (I used\u00a0 Lawry\u2019s seasoned salt<\/a>, black pepper, onion powder, garlic powder and oregano.)<\/li><\/ul>\n\n\n\n
Directions<\/strong><\/em><\/p>\n\n\n\n
1. Cook the ground beef and sausage in the dutch oven over medium-high heat until the beef is not pink. Drain the excess fat and place the meat to the side in a bowl. <\/p>\n\n\n\n
2. Saut\u00e9 the peppers and onions in the dutch oven. Cook on medium-high heat until the vegetables are softened. Add the garlic and saut\u00e9 for an additional two minutes. <\/p>\n\n\n\n
3. Add the meat mixture back to the dutch oven. Then, stir in the remaining ingredients, including the seasonings.<\/p>\n\n\n\n
4. Bring the chili to a boil.<\/p>\n\n\n\n
5. Reduce the heat to low. Cover the dutch oven and simmer the chili for 30 minutes, stirring occasionally.<\/p>\n\n\n\n

*I had a leftover yellow pepper and an extra tomato so I chopped them up and put them in the chili. That is one of the greatest things about chili. You can throw (almost) any extra vegetables in it.<\/p>\n\n\n\n
*Chili is more flavorful if you serve it the day\u00a0after\u00a0you cook it.<\/p>\n\n\n\n
