That is how I came up with this easy egg and avocado wrap.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><a href=\"http:\/\/www.mominthecity.com\/wp-content\/uploads\/2013\/09\/egg-and-avocado-breakfast-wrap.jpg\"><img decoding=\"async\" src=\"http:\/\/www.mominthecity.com\/wp-content\/uploads\/2013\/09\/egg-and-avocado-breakfast-wrap.jpg\" alt=\"Egg and Avocado Wrap (Healthy Egg Breakfast Recipe)\" class=\"wp-image-21905\" loading=\"lazy\"><\/a><\/figure><\/div>\n\n\n\n<p>At my home, dinner is consistently easy but breakfast and lunch require a bit more thought. I have mentioned before that my kids are not big breakfast fans, so I\u2019m constantly trying new things. <br><br>Earlier this week, I was over at my friend\/hairdresser\u2019s home and she made me an egg and avocado sandwich for breakfast. Originally, my friend fried the egg in oil and served it with the avocado on wheat bread. It was really good, so I decided to make it healthy(ish) and try it out for Michael since he loves to eat avocado.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-egg-and-avocado-wrap\">Egg and Avocado Wrap <\/h2>\n\n\n\n<p>To make the egg and avocado breakfast wrap, I scrambled 2 eggs (1 whole egg plus the egg whites from the second) using a non-stick cooking spray. Then, I placed the eggs along with avocado slices and sea salt on a warmed whole-wheat tortilla. (The larger crystals in sea salt or kosher salt really bring out the flavor of the avocado!) It was delicious.<\/p>\n\n\n\n<p>Alas, this breakfast still didn\u2019t entice Michael or Sean. They still only like eggs in <a href=\"https:\/\/www.mominthecity.com\/quiche-lorraine-recipeeasy-one-dish-meal-for-mothers-day-brunch\/\" target=\"_blank\" rel=\"noreferrer noopener\">quiche<\/a>. Oh well, at least <span style=\"text-decoration: underline;\"><b>I<\/b><\/span> found a new favorite breakfast. I just add a little protein from whatever leftover meat I have in the refrigerator. <\/p>\n\n\n\n<p>In any event, if you and\/or your kids like eggs and avocado, try this quick, healthy breakfast wrap.
