Nipping your fingers while you are zesting a lemon and then having the juice from that same lemon seep into your open scratch before you have time to grab a band-aid. That\u2019s what!\u00a0 That is why this delicious lemon meringue pie recipe with shortbread crust is a \u201cspecial occasion only\u201d pie\u2026<\/p>\n\n\n\n<p>For the record, I am not a huge pie baker.\u00a0 However, I\u2019m driven to know how to make my husband\u2019s favorite dishes.\u00a0 Besides apple pie, lemon meringue pie is next on his \u201ctop pies\u201d list.\u00a0 I learned how to make his favorite apple pie from his former boss, but I had to go digging for a lemon meringue pie recipe. <br><br>For this recipe, I ended up using a mash-up of recipes from Ina Garten, Alton Brown and Paula Deen.\u00a0 I used Ms. Garten\u2019s pie filling. I just added some cornstarch and whisked it twice as long as she suggested because the filling was too runny initially.\u00a0 <br><br>For the meringue, I mixed the recipes of Ms. Garten (sugar), Mr. Brown (egg whites) and Ms. Deen (cream of tartar).\u00a0 I was so shocked that the meringue was so easy to make.\u00a0 If you follow the instructions, it\u2019s (almost) impossible to mess it up. It\u2019s also really tasty\u2026I had to stop myself and the boys from eating it so that there would be some left for the actual pie!<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-full\"><img decoding=\"async\" width=\"500\" height=\"363\" src=\"https:\/\/www.mominthecity.com\/wp-content\/uploads\/2021\/09\/lemon-meringue-pie-recipe-juicer.jpg\" alt=\"\" class=\"wp-image-38587\" loading=\"lazy\" srcset=\"https:\/\/mominthecity.com\/wp-content\/uploads\/2021\/09\/lemon-meringue-pie-recipe-juicer.jpg 500w, https:\/\/mominthecity.com\/wp-content\/uploads\/2021\/09\/lemon-meringue-pie-recipe-juicer-300x218.jpg 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><figcaption>My own personal \u201cjuicer\u201d<\/figcaption><\/figure><\/div>\n\n\n\n<p class=\"has-text-align-left\">Initially, I wasn\u2019t going to share this recipe with you because I just used a shortbread crust that I purchased at the store.\u00a0 However, I was talking with some friends recently and they all agreed that preparing the lemon filling and meringue was more than enough to make it \u201cmine\u201d.\u00a0 <\/p>\n\n\n\n<p class=\"has-text-align-left\">In any event, my husband thought that this was one of the best lemon meringue pies that he ever tasted. That made it worth the \u201cpain\u201d.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-best-lemon-meringue-pie-recipe-with-shortbread-crust\">Best Lemon Meringue Pie Recipe With Shortbread Crust<\/h2>\n\n\n\n<div class=\"print-this-button-shell\">\n<button type=\"button\" class=\"print-this-button\" onClick=\"parent.location='https:\/\/mominthecity.com\/best-lemon-meringue-pie-recipe\/?printthis=1&printsect=1'\">&nbsp;&nbsp;&nbsp;&nbsp;Print This!&nbsp;&nbsp;&nbsp;&nbsp;<\/button>\n<\/div>\n<!-- Print This Section 1 Start -->\n<div class=\"print-this-content\">\n\n\n\n<p><strong>Best Lemon Meringue Pie<\/strong><br><em>Yield:\u00a01 pie<\/em><\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 (9-inch)\u00a0pre-baked pie shell (I used a shortbread one.)<\/li><li>1 stick\u00a0unsalted butter, room temperature<\/li><li>1 1\/2 cups\u00a0sugar<\/li><li>7 extra large\u00a0eggs (4 whole plus 3 yolks)<\/li><li>1\/4 cup\u00a0finely grated lemon zest (8 lemons)<\/li><li>1\/2 cup\u00a0lemon juice<\/li><li>2 tsps\u00a0cornstarch<\/li><li>1\/8 tsp\u00a0kosher (or regular table) salt<\/li><li>4 extra large\u00a0egg whites, room temperature<\/li><li>1\/4 tsp\u00a0cream of tartar<\/li><li>1\/2 cup\u00a0sugar<\/li><\/ul>\n\n\n\n<p><strong>Directions<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat the over to 375 degrees F. (The oven rack should be in the middle position.)<\/li><li><em><strong>For the lemon filling:<\/strong><\/em>\u00a0Using an electric mixer with a paddle attachment, cream the butter and sugar together in a large bowl for one minute. (I started off on setting \u201c2\u201d and then turned it up to \u201c4\u201d.)<\/li><li>On low speed (\u201c1\u201d), add the 4 eggs and 3 egg yolks one at a time. (I paused 15 seconds between adding each new egg.)<\/li><li>Next, add the lemon zest, lemon juice, corn starch and salt.<\/li><li>Pour the contents of the bowl into a small saucepan and cook it over medium low heat for 10 minutes until it thickens while stirring constantly with a wooden spoon.<\/li><li>When the mixture starts to thicken, whisk it briskly and cook it over a low heat for 10 more minutes while periodically whisking it.<\/li><li>(Be careful not to boil the filling. It should be 175 degrees when using a cooking thermometer.)<\/li><li>Pour the lemon filling into a bowl and allow it to cool to room temperature.<\/li><li><em><strong>For the meringue:<\/strong><\/em>\u00a0Put the 4 egg whites and cream of tartar into a large bowl.<\/li><li>Using an electric mixer fitted with a whisk attachment, beat the egg whites on a high speed (\u201c5\u201d) until frothy peaks form.<\/li><li>With the mixer still running, slowly add the sugar and continue beating the mixture until the meringue is thick (two minutes).<\/li><li>Pour the cooled lemon filling into the pie shell and dollop the meringue completely over the filling. Make sure that the meringue covers all of the filling and touches\/seals to the edges of the pie shell crust.<\/li><li>Bake the pie until the meringue is golden brown (approximately 12 minutes).<\/li><li>Remove the pie from the oven and cool it to room temperature on a wire rack.<\/li><li>Place the pie in a refrigerator until it is completely chilled (approximately 3 hours) before slicing and serving.<\/li><\/ol>\n\n\n\n<div class=\"clear\"><\/div><\/div>\n<!-- Print This Section 1 End -->\n\n\n\n\n<p>Although there are a lot of steps, this is a relatively simple pie to make.\u00a0<strong><em>If you found this recipe helpful, please share it.
