Libby\u2019s also has some budget-friendly dishes for the holiday season. I\u2019ve included a couple of the recipes below and I\u2019ll be sharing a few more next Tuesday. <\/p>\n

TURKEY PASTA SALAD WITH BASIL DRESSING
\n<\/strong>Prep time: 10 minutes
\nCook time: 8-10 minutes
\n8\tounces uncooked fusilli or rotini pasta
\n1\tcan (15 oz.) Libby\u2019s Sweet Peas, drained
\n1\tcup (about 8 oz.) diced cooked turkey
\n1\tsmall red bell pepper, cored and diced
\n1\/2\tcup bottled Italian dressing
\n1\/4\tcup chopped basil
\n1\ttablespoon lemon juice
\n1\/2\tteaspoon salt
\n\tPinch of red pepper flakes
\nCook pasta following package directions; drain and rinse with cold water. In a large bowl, combine pasta with remaining ingredients. Toss gently until well mixed. Serves 4

WILD RICE PILAF
\n<\/strong>Prep time: 10 minutes
\nCook time: 35 minutes
\n2\ttablespoons butter
\n1\tcup chopped celery
\n1\tcup chopped onion
\n2\tpackages ( 4.3 oz. each) long-grain and wild rice mix
\n1\tcan (15 oz.) Libby\u2019s Whole Kernel Sweet Corn, drained
\n1\tcan (8.5 oz.) Libby\u2019s Peas and Carrots, drained
\n1\/2\tcup toasted sliced almonds*
\nIn a large saucepan, melt butter over medium heat. Add celery and onion; cook about 5 minutes or until soft. Add rice, seasoning packet and amount of water specified on the box (omit butter). Bring to a boil; reduce heat, cover and simmer about 30 minutes or until liquid is absorbed and rice is tender. Add corn and peas and carrots; stir gently over medium heat until heated through. Transfer to serving bowl; sprinkle with almonds.
\nServes 4
\n* To toast almonds, place on a baking sheet in a 350\u00b0F oven about 15 minutes or until golden brown.
