I love this idea from Lauryn Cohen, the founder of (the former) Bella Baker company, for red velvet whoopie pies. <br><br>Lauryn was kind enough to share her amazing easy Red Velvet Whoopie Pies recipe with us so that we could make them for our little sweeties. Enjoy!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-easy-red-velvet-whoopie-pies\">Easy Red Velvet Whoopie Pies<\/h2>\n\n\n\n<div class=\"print-this-button-shell\">\n<button type=\"button\" class=\"print-this-button\" onClick=\"parent.location='https:\/\/mominthecity.com\/easy-red-velvet-whoopie-pies-recipe\/?printthis=1&printsect=1'\">&nbsp;&nbsp;&nbsp;&nbsp;Print This!&nbsp;&nbsp;&nbsp;&nbsp;<\/button>\n<\/div>\n<!-- Print This Section 1 Start -->\n<div class=\"print-this-content\">\n\n\n\n<p><strong>Red Velvet Whoopie Pies<br><\/strong><br><strong>Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>3 cups all-purpose flour<\/li><li>1\/4 cup cocoa powder<\/li><li>1 teaspoon baking powder<\/li><li>1\/2 teaspoon baking soda<\/li><li>1\/4 teaspoon salt<\/li><li>1 stick (8 tablespoons) unsalted butter, softened<\/li><li>1\/2 cup vegetable shortening<\/li><li>1\/2 cup packed light brown sugar<\/li><li>1 cup granulated sugar<\/li><li>2 teaspoons pure vanilla extract<\/li><li>2 tablespoons red food coloring<\/li><li>1 cup buttermilk<\/li><\/ul>\n\n\n\n<p><strong>Instructions:<\/strong><br>1. Preheat oven to 350 degrees and line two baking sheets with parchment paper. <br><br>2. Whisk together the flour, cocoa powder, baking powder, baking soda and salt in a bowl and set aside. <br><br>3. In the bowl of a stand mixer with a paddle attachment, beat the butter, shortening, and both sugars on medium until pale and fluffy. <br><br>4. Add the egg, one at a time, beating until each egg is fully incorporated into the butter and sugar mixture. <br><br>5. Beat in the vanilla and the red food coloring. <br><br>6. Reduce mixer speed to low, add half of the flour mixture, all of the buttermilk, and the other half of the flour mixture. <br><br>7. Using a medium sized cookie scoop, drop the batter even mounds onto the parchment lined baking sheets. <br><br>8. Bake one sheet at a time for 9-10 minutes, or until a toothpick inserted in the whoopie pie comes out clean. <br><br>9. Remove from the oven, let cool for about 5 minutes and transfer to a wire rack to cool completely.<\/p>\n\n\n\n<p><strong>Cream Cheese Frosting<br><\/strong><br><strong>Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 stick (8 tablespoons) unsalted butter, room temperature<\/li><li>12 ounces cream cheese, room temperature<\/li><li>1 pound (4 cups) confectioners sugar<\/li><li>1 teaspoon pure vanilla extract<\/li><\/ul>\n\n\n\n<p><strong>Instructions:<\/strong><br>1. With an electric mixer on medium-high speed, beat butter and cream cheese until fluffy, 2 to 3 minutes. <br><br>2. Reduce speed to low. Add sugar 1 cup at a time, and then vanilla, mixing until smooth and combined, scraping down sides of bowl as needed. <\/p>\n\n\n\n<p>(If not using immediately, frosting can be refrigerated up to 3 days in an airtight container. Bring to room temperature again before using.)<\/p>\n\n\n\n<p><strong>Assembly:<\/strong><br>1. Fill a piping bag fitting with a star tip with your cream cheese frosting. <br><br>2. Flip one of your Red Velvet Whoopie Pies over so the bottom is facing up. <br><br>3. Starting from the outside, frost your whoopie pie in a circular motion, working your way in, until the entire circumference is frosted. <br><br>4. Gently press the bottom side of another whoopie pie on top, creating a \u201csandwich\u201d.<\/p>\n\n\n\n<div class=\"clear\"><\/div><\/div>\n<!-- Print This Section 1 End -->\n\n\n\n\n<h2 class=\"wp-block-heading\">Variations<\/h2>\n\n\n\n<p>I love how pretty these look with minimal effort. If you wanted to add a little extra Valentine\u2019s oomph, you could coat the sides of the whoopie pies in heart-shaped sprinkles or even pink and red dot sprinkles. <br><br>You could also make them mini simply by scooping out the batter with a smaller ice cream scoop. There are lots of possibilities!
