As a networking event\/informal chat, the night included a discussion of hot trends, staying organized and balancing work and family life. I also learned an almond butter dip recipe while there.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><a href=\"http:\/\/www.mominthecity.com\/wp-content\/uploads\/2011\/08\/almond-butter.jpg\"><img decoding=\"async\" src=\"http:\/\/www.mominthecity.com\/wp-content\/uploads\/2011\/08\/almond-butter.jpg\" alt=\"Almond Butter Dip (A Healthy Lunch Option)\" title=\"almond butter\" loading=\"lazy\"><\/a><\/figure><\/div>\n\n\n\n<p>The night included a fun talk by Amie Valpone of the<a href=\"http:\/\/thehealthyapple.com\/\" target=\"_blank\" rel=\"noreferrer noopener\"> Healthy Apple<\/a>, a site that focuses on \u2018clean\u2019 eating and gluten-free recipes. It was refreshing to hear Amie talk about nutrition. <br><br>With an emphasis on natural eating, whole foods and ingredients that are good for you and your body, Annie\u2019s reminders were especially important for the back-to-school lunch season.\u00a0 <br><br>Looking through The Healthy Apple, I decided to try her recipe for <a href=\"http:\/\/thehealthyapple.com\/2011\/03\/14\/homemade-gluten-free-vegan-almond-butter\/\" target=\"_blank\" rel=\"noreferrer noopener\">Homemade Almond Butter<\/a>. I was really excited to test out this recipe since almond butter and jelly sandwiches have become a staple in my daughter\u2019s lunchbox. <\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><a href=\"http:\/\/www.mominthecity.com\/wp-content\/uploads\/2011\/08\/almond-butter-and-jelly-sandwich.jpg\"><img decoding=\"async\" src=\"http:\/\/www.mominthecity.com\/wp-content\/uploads\/2011\/08\/almond-butter-and-jelly-sandwich.jpg\" alt=\"almond butter and jelly sandwiche\" title=\"almond butter and jelly sandwich\" loading=\"lazy\"><\/a><\/figure><\/div>\n\n\n\n<p>Amie\u2019s recipe was simple with an unexpected use of tofu. I just enhanced it by making my own almond butter, one of the ingredients in the dip. The best part of it all was that the final dip was absolutely delicious, gluten-free and vegan.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-almond-butter-dip\">Almond Butter Dip<\/h2>\n\n\n<div class=\"print-this-button-shell\">\n<button type=\"button\" class=\"print-this-button\" onClick=\"parent.location='https:\/\/mominthecity.com\/healthy-lunch-options-almond-butter-dip\/?printthis=1&printsect=1'\">&nbsp;&nbsp;&nbsp;&nbsp;Print This!&nbsp;&nbsp;&nbsp;&nbsp;<\/button>\n<\/div>\n<!-- Print This Section 1 Start -->\n<div class=\"print-this-content\">\n<p><strong>Almond Butter Dip<\/strong><br>\n(Courtesy of <a href=\"http:\/\/thehealthyapple.com\/\">The Healthy Apple<\/a>)<br>\n<em>Yield: 4 servings<\/em><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Ingredients<\/strong><\/span><\/p>\n<ul>\n<li>1\/4 cup silken tofu<\/li>\n<li>1\/4 cup almond butter*<\/li>\n<li>1 tsp agave nectar<\/li>\n<li>1\/2 tsp cinnamon<\/li>\n<li>1\/6 tsp sea salt<\/li>\n<\/ul>\n<p><strong style=\"text-decoration: underline;\"><span style=\"text-decoration: underline;\">Cooking Instructions<\/span><\/strong><\/p>\n<ol start=\"1\">\n<li>In a food processor, combine all of the ingredients and pulse them until they are smooth.<\/li>\n<li>Transfer the almond butter into serving dishes or store it in a sealed container in the refrigerator.<\/li>\n<\/ol>\n<p><div class=\"clear\"><\/div><\/div>\n<!-- Print This Section 1 End -->\n\n\n\n\n<\/p><h2 class=\"wp-block-heading\">Recipe Notes<\/h2>\n\n\n\n<p><strong>*<\/strong>To make the almond butter, I simply blended a 16 oz bag of unsalted almonds and two teaspoons of sea salt together in a food processor until it reached my desired consistency.<\/p>\n\n\n\n<p>*The almond butter dip can be served with crudit\u00e9s and gluten-free crackers as well as on sandwiches.<\/p>\n\n\n\n<p><em><strong>If you found this recipe helpful, please share it.
