Here\u2019s one that is especially tasty.  (The Norwegian chefs cook large portions at a time, so it\u2019s best to either save this recipe for a large party <strong>or<\/strong> simply use 1\/3 of the ingredients to make 1 pie.)  Enjoy!<\/p>\n<p><strong>Banana Cream Pie<br>\nServed with Chocolate Sauce and Toasted Coconut<\/strong><br>\n<em>(3 pies cut in 8 portions)<\/em><\/p>\n<p>Amount of Ingredients\/Details<\/p>\n<p>3 lb\tPastry cream (see sub-recipe)<br>\n1 \u00bd lb \tWhipped cream<br>\n3 lb\tBanana<br>\n3 oz\tShredded coconut, toasted<\/p>\n<p><strong>Procedure:<\/strong><br>\n\u2022\tUsing a tin pie pan, place pie dough (see sub-recipe) and pre-bake it. Set aside and let it cool.<br>\n\u2022\tCook the pastry cream and set it on the side.<br>\n\u2022\tSlice fresh banana longwise and place it in the bottom of the pie pan.<br>\n\u2022\tCover with pastry cream and place more sliced banana.  Place more pastry cream on top of it and let it set in the refrigerator.<br>\n\u2022\tOnce cold, place a good amount of whipped cream and sprinkle with toasted coconut. <\/p>\n<p><strong>Pastry cream<\/strong><br>\n<em>Makes 3 lbs<\/em><\/p>\n<p>Amount of Ingredients\/Details<br>\n32 fl oz\tMilk<br>\n8 oz\tGranulated sugar<br>\n1 tbsp\tVanilla Extract<br>\n2 1\/2 oz\tCornstarch<br>\n10 1\/2 oz Egg yolks \t\t<\/p>\n<p><strong>Procedure:<\/strong><br>\n\u2022\tCombine 3\/4 of the milk and 1\/2 of the sugar in the saucepan and bring to a boil.<br>\n\u2022\tMeanwhile, combine the cornstarch with the remaining sugar and the rest of the milk stirring with a wire whisk.<br>\n\u2022\tAdd the egg yolks and the vanilla extract and stir until the mixture is completely smooth.<br>\n\u2022\tTemper the egg mixture by adding about one third of the hot milk and stir the remaining milk in the saucepan and continue cooking.<br>\n\u2022\tWhisk vigorously until the pastry cream comes to a boil and the whisk leaves a trail in it.<br>\n\u2022\tPour the pastry cream into a large bowl and cover with a plastic wrap placed directly on the surface of the cream and cool over a ice bath.<\/p>\n<p><strong>Basic Pie Dough (or purchase ready made pie crust)<\/strong><br>\nMakes: 6 lbs<\/p>\n<p>Amount of Ingredients\/Details<br>\n3 lb\tAll purpose flour<br>\n1\/2 oz \tSalt<br>\n1 lb \tButter<br>\n1 lb \tShortening<br>\n16 fl oz\tWater, Cold\t\t<\/p>\n<p><strong>Procedure:<\/strong><br>\n\u2022\tUsing a hook attachment and a bowl of a stand mixer, combine flour, salt and add the butter and the shortening mix until pea-size nuggets form.<br>\n\u2022\tAdd the water all at once and continue to mix until the dough just comes together.<br>\n\u2022\tWrap tightly and refrigerate for a least one hour before rolling.<\/p>\n<p><strong>Chocolate Fudge Sauce<\/strong><br>\nMakes: 2 lbs<\/p>\n<p>Amount of Ingredients\/Details<br>\n6 oz\tDark chocolate Semi-sweet<br>\n2 1\/2 oz\tButter<br>\n9 fl oz \tWater<br>\n8 oz \tGranulated sugar<br>\n5 1\/2 oz\tCorn syrup Light<br>\n3\/4 fl oz \tBrandy\t\t\t\t\t\t<\/p>\n<p>Procedure:<br>\n\u2022\tUsing a double boiler, melt the chocolate and the butter.<br>\n\u2022\tStir in the water, sugar and corn syrup.<br>\n\u2022\tTransfer the mixture to a saucepan and simmer over low heat until the sugar has melted and all the ingredients are thoroughly combined, about 5 minutes.<br>\n\u2022\tRemove from the heat and cool slightly.<br>\n\u2022\tStir in the Brandy and serve warm.<\/p>\n<p><strong>Chantilly Cream <\/strong><br>\nMakes: 2 lbs 4 oz<\/p>\n<p>Amount of Ingredients\/Details<br>\n32 fl oz\tHeavy cream<br>\n4 oz\tPowder sugar<br>\n1 tbsp\tVanilla Extract\t\t\t<\/p>\n<p><strong>Procedure:<\/strong><br>\n\u2022\tWhip the cream to very soft peaks.
